Description

These arepas are from Boyacá (thus the name). Made with a combination of wheat and corn flour, the dough also has cheese, butter and panela (a raw sugar typical of the region).

These are different from the typical arepas you’ll see around Bogota; they’re smaller, fatter, and darker. The fun thing about them is that they are cooked on their own individual spinning plates so they get evenly browned all around.

You can’t find these arepas just anywhere, since they require that special stove with the spinning plates. They’re usually made and sold fresh in small restaurants like Eucalipto. Steaming hot and filled with gooey cheese, they are excellent with hot chocolate to warm up a chilly morning in Colombia’s capital city.
